Kevin Dundon's Green Vegetable
Stir-Fry with Garlic Noodles
Takes approx 10 minutes and serves 4
Ingredients
- 4 sachets of Kerrymaid Garlic Butter
- 2 heads of Broccoli
- 8oz/220g Mangetout
- 8oz/220g Sugar Snap Peas
- 2 Leeks
- Chilli flakes
- Teaspoon of honey
- Salt and pepper
- 8 nests of dried egg noodles (2 nests per person)
Method
Begin by preparing all the vegetables:
Cut the leeks into ribbons.
Cut the broccoli into small florets.
Slice the sugar snap peas and mangetout at an angle.
Leave the vegetables to one side and bring a large pan of salted water to the boil. Add in the noodles and cook according to the packet instructions until tender.
Meanwhile heat a large wok or frying pan to quite a hot temperature. Add in all of the green vegetables and stir-fry for 3-4 minutes. Season the mixture with salt, black pepper and chilli flakes. Add the teaspoon of honey. Finally add two sachets of Kerrymaid Garlic Butter and cook for a further minute.
Drain off the water from the noodles and add two sachets of Kerrymaid Garlic Butter. Toss the noodles around to coat them in the butter.
Place a helping of noodles in each bowl and top with the vegetables. Serve immediately.
